Should we worry about booking in advance if we are planning to stay in a budget to mid-range place for 1 night in June? Will there be plenty of choices? Do they give big discounts on their normal rates if you book upon arrival (stand by rates)? Do they work on a bartering system there and encourage negotiating lower rates? Is there a good place to go to find cheap accomodation upon arrival at the train station or ferry terminal?

There shouldn't be high demand for Ancona in June, and since you only stay for one night, I doubt if you will find a big discount in any hotel whether you book in advance or on a walk-in basis.
There is no bartering system on hotels in Italy. There is no hotel reservation office on the premise of Ancona train station.

It depends on where you'd like to stay. High-rate hotels (4 stars) are mostly business, so busy during the week, and empty in the weekend. However, low-budget hotels are not so cheap (60-70 Euros per night minimum for a double room), and not so nice. There is a youth hostel, nearby the station, member of the IHG.
I would suggest, in the weekend, Grand Hotel Passetto. It's rather expensive, but as you wake up you go directly to a beautiful sea and have a great swim. I think that this is worthwhile. In case to choose, I'd avoid Grand Hotel Palace (not a good service, not very polite, although it's in front of the harbour, comfortable to take a ferry).
