MONEY: Either US dollars or Euros will be fine. Minimize use of traveler checks

HOTEL: Stay in the Wangfujing area if you are a tourist. If you're in Beijing for another reason then some place convenient like the Chongwenmen Hotel or Novotel in Chongwen District.

RESTAURANT: Wangfujing's Oriental Plaza and Xuanwumen's SOGO Department store both have excellent Food Courts.

As you live in France, there is absolutely no need to bring USD: Euros are just fine, both banks and hotel exchange desks accept them without any problem. ATMs are also readily available (make sure you have the maestro function activated).

We stayed at the Hao Yuan hotel: http://www.haoyuanhotel.com/, a cosy, quiet courtyard hotel a couple of minutes walking from Wangfujing road. Excellent service. We booked directly with them via their e-mail address listed under "contact" on their website. Book in time for they do not have many rooms and they fill up pretty quick.
We also stayed at the Taiwan hotel (because Hao Yuan was full), but we prefer Hao Yuan by far.

Use ATM's (Bank of China ones work always with foreign cards) and take a back up of cash with you. Avoid TC's.

When I went to Paris many years ago there was a Chinese restaurant near Notre Dame simply called "Restaurant A" and owned by a talented Vietnamese-Chinese family that did ice and vegetable carvings. I wonder if it's still there. Have you heard of it?
