All over the world there are different ways of preparing roast suckling pig. Is there anyone who can share her recipe for roast suckling pig in their own country? I know that in Spain they have the best cochinillo. Maybe someone can share what goes into it?

In Samoa, first things first to properly umu a puaa.... You find yo neihbor no home. Yo Neighbah with choke pigs... When yo neighbor no home, you cockorocah one pig, eh? Da big kine pig. Ono lookeen one. Now you drag one big you find in neighbors back yard to beech. An we go in dem water wit da big. You need blaadahs to be wit you to hold down da puaa in da water so he no breath. And da pig put up one fight, so bring da strong braddahs wit you. Keep pig in water to it dies. Then to work. slit throat slit uunderbelly, tie off urine sak so as no pollute meat. Take out all organs and put rock salt in belly of pork with some pounding of mango stalks to soften up and tenderize the meat. you cut the pig and put in parts to cook fast or longer and place in undergroud umu. Hot rocks ready and plenty tarps so you put the pig on the rocks, layer with tarp nd cover with leaves too more tarp, more leaves and put dirt on top nd let thie one pig you found at neigh house simmmer a few hoursl. oh it gon taste so ono... you and you buddies suck back 3 or 4 cases of beer... nd 4 hours later you can uncover the big. unwrap banana wrap, and tarp nad moe banana wrap and trap and now you hav the pig read to be eaten but it soft juicey flesh to come off the obbonesl it tastes divine. And who sais the pig had to beyour to taste good.
