I am looking for some snow to walk through and enjoy - not interested in skiing or winter sports, just looking at snow. Does anyone know of a good place to see snow in Aichi or Gifu prefectures?

You are lucky. This winter we are having extraordinarily heavy snow.
Any tourist spots in mountainous area, especially Gifu-ken, are covered by snow now. How about Hida Takayama? This is an old castle town. http://www.hida.jp/english/ Shirakawago, a world heritage place, must be fantastic too, if you can get there in this heave snow… http://www.vill.shirakawa.gifu.jp/e/index.html
