Please tell me if Island Cove is a great place to celebrate a significant birthday for approximately 50 to 75 people.

What kind of celebration you have in mind? Is it overnight or just a day long event? Will there be side activities like fishing, swimming, etc.? Will there be dancing, live music or singing (videoke style)? Or will it just be lunch or dinner with drinking? Also, where are your guests coming from? Traffic going to Island Cove is heavy especially in Coastal and Bacoor.
Depending on what your planned activities are, there could be options that are more accessible and reasonably-priced.

I agree with Aida, it really depends on what you intend to do. If it is for the 7th birthday of a child, sure! It think it would be a treat since they have a zoo and a butterfly farm, crocodile farm, and a large pool. But if it is for something like a debut, maybe not and you're probably better off celebrating it in punta baluarte or the nurture spa in tagaytay, or chateau royale in nasugbu.
I have a review of island cove. feel free to visit it.
