Since my father passed away 4 years ago, I've spend Xmas times with my mother in the Canary islands (this way she feels less melancholic during these dates, as "it does not seems Christmas if it's not cold"). Never had a problem finding somewhere to eat. 2 times, we were in Tenerife but in Puerto de La Cruz, don't think it will be different in any other town. Last year we had an "interesting" lunch on Xmas day in an inexpensive tiny restaurant in the village of Masca, typical Canary food is delicious! Yummm... looking for next time!
On Xmas Eve many restaurants will close, but hotels usually have a special menu (if you are not in a hotel, sure you can go to one to have dinner). No problem on the other dates, it's peak season!
By the way, my favourite restaurant in Tenerife is "La Rosa di Bari" in Puerto de La Cruz... this remind me I should write a tip about!
A little piece of advice: If you plan to take the cable car to the top of El Teide (very reccomendable, by the way), better do it in one non-festive day. It seems that a local "tradition" from Canarian families is going there with the kids on Xmas holidays to "touch the snow" ... so it's crowded!
