Moorings probably has the best and most modern fleet, but is the most expensive. Sunsail (which I've used twice is a close second, and you can often get deals (viz. 10 days for the price of seven) if you are willing to go slightly off season. Probably the cheapest is Conch, which uses older boats, many previously owned by Moorings or Sunsail, etc. These keep boats only five years.
I can't remember the name exactly, (I think it's Hamilton) but an agent like this can often give you the best deal among all the charter companies, and he has a toll-free number as well. Try a Google search for him.

Under no circumstances would I do a crewed charter with Moorings. Moorings is in the bareboat business and that is where they concentrate their firepower. You can get a skipper from them, but he may not have your happiness at heart like a skipper who is chartering his own boat would do.

IMHO it is much better to contract through a broker with the individual skipper. This is http://www.caribbeancharter.com/catalog.htm is one place, and also Ed Hamilton does some, but I have not used him.
