Could anyone give advice on places to stay in the Sai Kung region? I know there are a lot of camp sites, but I was thinking of hotels / bed and breakfasts.

Great choice! Sai Kung is a beautiful area.
There are some youth hostels in Sai Kung and you can find more info at http://www.yha.org.hk/. Have fun in HK. Cheers, bpb
