I think that Chau Doc should be visited. Especially climbing in the Sam-mountain to see the Cambodia.
Sinh Cafe Mekong Delta tour is full of activity and must-see places, so its highly recommend. See pics and more info on my Vietnam page.

Chau Doc is worth to visit. Sam-mountain, Tay An Pagoda are interesting places which feature the Mekong Delta culture. However, if you try Chaudoc in 2 day-tour, it can make you weary. There are some floating markets that worth to see including Cai Be in Vinh Long, Cai Rang and Phung Hiep floating market in Can Tho. However, 3 days is better as you can see both Can Tho and Chau Doc. Chau Doc is 280km far from SGN so if you want to include Chau Doc in your 02 day tours, you will have to cut out Can Tho
The 3 days tour include both Can Tho and Chau Doc could be as follows:
Day 1: SGN - Vinh Long - Can Tho
From Saigon, you proceed to Vinh Long in early morning to visit Cai Be floating market; then have an interesting boat ride in the canal network in Vinh Long. You will have a lunch in a Bonsai garden. After lunch, transfer to Can Tho, you could arrive Can Tho at around 5 PM and visit the Stork sanctuary in Thot Not district to see the birds returning their home. Overnight in Can Tho
Day 2: Can Tho - Chau Doc
Proceed to Chau Doc. The rest of the day to visit some pagodas and temples, seeing incense making and Vietnam Cambodia border and viewing sunset from the top of Sam mountain. Overnight in Chau Doc
Day 3: Chau Doc - Saigon
In the morning, visit caged-fish breeding floating houses - a village of Cham ethnic minority there - before returning Saigon.
Hope this helps.

Sa Dec

I did my own private Mekong tour (which is rather interesting) and went to the city of Sa Dec. This was the most beautiful place I've been in the delta. The book "L'Amant" (the lover) by Maguerite Duras and also the movie "The Lover" was shot here. It is as beautiful and original as in the movie. Maybe you can stop over here for a day. It's worth it. And don't forget to have one "ca phe sua da" (iced coffee) along the river side.

The best places to visit in a 2days tour to the Mekong Delta are Xeo Quyt - Sa Dec - Can Tho. The nicest floating market is Cai Rang. i think if you have a lot of time you can go to Chau Doc, and stay in Can Tho is better. Visit our website for futher more information: www.saigonrailtour.com
