I felt very safe in Knysna. It is a lovely, peaceful place and was one of the highlights of my trip to RSA. If you like birdlife it is a great place to spot all kinds of exotic species including the rare Knysna Lourie.
I can thoroughly recommend Pumula Lodge if you are looking for accommodation. It is a wonderful place and the owner, Peter Ellis, is a very nice guy. Details on my Knysna page which, unfortunately, doesn't have a lot of info at the moment.
Something else you might like to do is take a ride on the Outeniqua Choo Tjoe steam train that runs between Knysna and George. I wanted to do this but unfortunately ran out of time.

Knysna is as Phil said a very nice place, visit the lagoon, take a trip on the train and do some hiking. There are a few nice campsites too. The food is great. We had no problems what so ever. Seemed very safe to us.
