Need info on Valencia Cuisine

Hello guys, can you please suggest a few genuine Valencia dishes? If a visitor is curious about Valencia, what dishes should he try?

    I think paella a la Valenciana is the main dish of that city.

    Try paella of course, but also fideua that's sort of paella made with noodles instead of rice. It's also tasteful. If you drink alcohol, don't miss a drop of "Agua de Valencia", mix of vodka, champagne and fresh orange juice. It's delicious! Enjoy.. gmg

    Valencian cuisine is not only about Paella (even you must try a good one, go to the specialized restaurants and avoid the tourist traps). By the way, be aware that the "typical" Paella Mixta (with both meats and seafood) you'll usually find as "Spanish" recipe elsewhere, is considered by many Valencianos as an aberration. They have a lot more rice dishes (rice fields in the area) as 'Arròs a banda' (typical fishermen dish) or Arròs Negre (back rice, with squid ink... I love it but it's not everyone's taste). Another very typical dish, but only for the adventurous: "All i pebre", stew of potatoes and eel. Desserts tend to show a strong Arab influence, with sweets made of almonds and honey. The most famous are the "turrones", typical for Christmas but you can find then all the year round now in touristy shops. As said above the most typical and unique summer drink is the "Orxata" (in Valencian, "Horchata" in Spanish) made with tiger nuts, go for the fresh made ones, the bottled versions are awful). This is typically drank at the afternoon, dipping some "fartons" (yes, funny name, these are a kind of long sweet pastry rolls) on it. Be careful with the "agua de Valencia".... and enjoy your trip!
