Shop hours..markets etc..Questions..

We plan to be in Valencia from an early Saturday afternoon ..sunday and Monday..Till what time are shops open in center?/Are there any shops open on Sundays?Where are souvenir type shops to be found?Supermarkets? Any good markets to explore Sunday and Monday? Many thxs!
