Sevilla Day Trip Parking and recommendations

I am staying in Vilamoura for a week and am going to drive to Sevilla for a day trip. We would like to visit the old jewish quarter and also the cathedral. Can anyone recommend a good parking spot with easy access. I hear the metro is now open, would one of the stations be a good place to leave the car for the day with easy access to the city? Also any recommendations on "must see's" time permitting? I guess we will be in town between 11 am and 9pm Any advice would be appreciated.
