I'll be arriving at Schiphol on a Delta/KLM flight from Atlanta and connecting 90 minutes later to a KLM flight to Cape Town on Saturday, January 23. Will I need to clear any kind of passport control if I'm not connecting to the Schengen area? If yes, will 90 minutes be enough time to comfortably make my connection?

no worries, both the American and the African flights are on the international terminals, so you won´t have to bother with EU/Schengen passport control. The machines to Africa usually start boarding an hour prior to departure - lots of passengers to place, after all. but I think the longest it takes you to move from one gate of the international terminals to the more remote gates is about a 15 minutes walk, so you might even have time to grab a coffee
