Hiking in the Winter

I especially like the photos of Jochberg and would love to hike there. However, I am heading to Munich in November and leaving in December. Is it possible to do any mountain hiking during those months ? And since the ski mountains do not open until later in December how can I a climb a mountain ? Suggestions please and thank you !!
