I doubt you will find many hotels which provide halal food. The excellent: zabihah.com/sp.php?k=hotel&l... does not come up with any. There are plenty of halal restaurants in Madrid, and perhaps you should plan to eat in those: zabihah.com/sp.php?l=madrid&...

Same applies to hotels I imagine. Zabibah shows several halal restaurants in Granada: zabihah.com/sp.php?k=type+%2... but, oddly, none in Cordoba on its search pages. I came across this website for a halal restaurant in the city: http://www.laorkebab.com/ and I'm sure there must be at least one or two more. I haven't visited Cordoba or Granada so have no personal experience of the restaurants.
