From Napoli to bari you can check: www.trenitalia.com
and from Bari to Matera: http://www.fal-srl.it/en/index.html There are different links because train companies are not the same for all the routes.

As far as I know there is no bus from Sorrento to Matera.
There is, however, a bus from Naples to Matera. That might be an option owrth considering.
You would take the Circumvesuviana train from Sorrento to Napoli Garibalid station first. Journey time is just over an hour and trains are fairly frequent.
Here's the bus website (in Italian):

There are buses at 1400 and 1700, leaving from Piazza Garibaldi (the huge square outside Napoli Garibaldi station, where you will arrive on the Circumvesuviana).
