Temple Street Market is the famous night market in Hong Kong. Mong Kok has a variety of markets - flower market, bird market, ladies market for clothes. These are open during the day and, as things don't close early here, will continue till evening. Don't know when they close. As for a Chinese fan you could try China Arts and Crafts - there is a big one in Tsim Sha Tsui or you could try Stanley Market - which has lots of touristy stuff, or the souvenir shops in Tsim Sha Tsui.

The Mongkok night market that you're referring to is Ladies Market, which opens around 12PM and runs until 11:30PM. So, it's a night market in that respects, but, you can also go during the afternoon. I personally prefer Ladies Market, but, you can go to both and work out which one you like. Another worthy market, as mentioned above, is Stanley Markets on HK Island, but, do not go there too late as they close around 6PM (I think it's best to go around lunch time or early afternoon, as stalls may still be setting up in the morning).
