RE: what to do?
Galway City itself is a treat. If Kenny's Bookstore is still open it is a must. Have heard that they are closing to just sell online. A walk around town is a must and even if you don't buy a Claddagh ring do look at the area from which it came.
Galway at nite is fun. Musicians playing on the street and fun pubs.
Connemara is one of the prettiest areas of Ireland. It is hard to drive anywhere without incredible scenery. Aughnanure Castle is one of my favorites. A minimum of a day drive around is a must. Spiddel, Clifton, Kylemore Abbey are all interesting. You can take a plane from near Roundstone over to the Arans. The Bens are gorgeous and if you have time take the N59 up to Westport and then come back down via the coastal route or the other way round. Lovely. Athenry Castle is interesting and the town charming.
