Florence - Gym/ Health Club and Easter Sunday

Will be in Florence next year for an extended time. I would like to join a health club. Any suggestions? Also will be there for Easter Sunday. I have read about the Cart being pulled to the Duomo. Any one have more information on this event? Thanks.
