I am travelling with my family from overseas and arriving at night. Is the taxi service to a hotel safe and reliable?
I would recommend that you ask your hotel to arrange a pick-up for you. Most hotels in RSA will do this. I have used taxi services in Cape Town (from airport they are usually fine) however, I do not know the situation in Durban.

I havn't heard of safety issues with metered taxis working from the airports. Price gouging is another matter, especially at night, same as most other airport taxis around the world. Pre-booking, via hotel, or via a decent shuttle company from the internet, is definitely recommended. Then you will be met by a person waving a sign and this stops the harassment by touts often found in all airports.
