I'd use the train. It takes around 1hr 45 minutes or a little over. The train station in Cadiz is big and spacious. Since it's the end of the line it's very easy to stand there and see which train you want.
At the other end you have two stations in Seville. Make sure you know which one you want. We didn't know there were two statsions, we picked the wrong one. We only had a day to look round. 6 years later it my stupidity still annoys me :-(
Any road journey in or out of Cadiz is a slow process. Just getting out of the city and across the causeway can take an hour. We did it by car, but ended up parking at the train station so next time we went by train anyway.
