From Vegas you could drive up the I15 St George and on to Zion and then on to Bryce late afternoon. Visit the park in the morning and then drive back via the North Rim back (its about a 2 hour round trip from the main road to the rim) to Vegas. Its not going to give you a lot of time at each place though.

There is not much accomodation at Bryce but check out these websites:

    Vegas to Zion 2.5 hours
Zions 3hours (visitors center and shuttle, walk to Weeping rock)
Zions to Bryce 1 1/2 to 2 hours (stopping for walk to Canyon Overlook, and Checkerboard Mesa)
Bryce 2 hours (visitors center and Inspiration Point)
Bryce to North Rim 3 1/2 hours
North Rim to Vegas 5 hours

Those are bare, bare minimum. Obviously you should stay a lot longer at Zions, take the walk to Emerald Pools and the Riverside walk. You could do that in a half day. Then Bryce or Kanab would be a good stopping place.

Route 67 to North rim opening is dependant on snowfall, which hasn't been abundant this year. Chances are good you could get in. The Mid-May opening for the hotel and visitors center and other services is before you are scheduled to arrive so I would not even think that the road won't be open.

    May 18th:
    * Go to Bryce first via Cedar City and Duck Creek Village. Should take you about 5 to 5.5 hours. This road is quite beautiful.
    * See the different viewpoints, hike around a bit
    * See the sunset at Bryce
    * Stay at Bryce

    May 19th:
    * See the sunrise at Bryce
    * Leave for Zion by 8 am.
    * You should be at the Zion Tunnel by 10 am.
    * Park at the parking lot just before the tunnel and go on the Canyon Overlook hike. Should take about an hour/hour and a half
    * Drive down to Zion -> coming from the east into Zion is an amazing experience. Don't miss it.
    * Have lunch, take the shuttle and go around the park. Hike if you like.
    * It is about 3 hrs to Vegas, so leave accordingly.

Forget about Grand Canyon North Rim. You just don't have the time.
