    Head west to the Lady bird Johnson wildflower reserve and then Fredericksburg and then down 281

    Yes! I have taken 281 from San Antonio to Dallas, you pass Lampasas and like many little towns in Texas, pretty neat, took me about the same time as I-35 because there was absolutely no traffic, but there are lights and small streets here and there.
